Gluten Free Facts

 

Here's a little information to help you get started and let you know why we do what we do.

What is gluten?

Gluten is a protein found in the grains wheat, barley, and rye. Oats have a similar protein and are highly contaminated in the manufacturing process. These grains are found in nearly everything that we eat, especially processed foods. Gluten has been an increasing problem over the years as it is particularly hard to digest.

Why is gluten free catering important?

​Having to maintain such a strict diet is a job in itself. Traveling, eating out, or going to a social event centered around food can be very stressful. You often have to bring your own food which can be both awkward and offensive to those who don't understand. Maura has too many times felt awkward at a bridal shower bringing her own food or turning down a friend for dinner for fear they will make her sick. She sees how hard it is for parents of gluten free children. She wants, more than anything, to provide people like her with an alternative. There are tons of catering companies out there and many of them can provide gluten free food. However, there is a huge potential for cross-contamination as well a lack of delicious, unique choices. Too often, they serve the classic chicken with rice and vegetables. No more! We make fresh breads, pastas, cookies, cakes, etc. You will feel like you did before you went gluten free and everyone else won't even be able to tell the difference!

What is Celiacs Disease?

Celiacs disease is an auto-immune disorder that is hereditary. This means that when a person eats gluten, their body considers it a foreign body and attemps to get rid of it by attacking the small intestine. The small intestine is the area of the body where nutrients are absorbed. So a person with Celiacs who eats gluten will damage the small intestine, reducing the amound of nutrients absorbed from the food they eat. This can lead to severe mal-absorbtion and mal-nutrition if not treated. The only treatment: eating a 100% gluten free diet.

Why gluten free is not always healthy

Going gluten free is often considered a healthier lifestyle. However, many gluten free versions of baked goods, breads, etc. are lacking in nutrition and actually have more fat and sugar than their gluten containing counterparts. Gluten free flour blends often contain white rice flour and starches. These ingredients provide nothing but empty calories. This means that an entire food group in your diet is missing or replaced by something unhealthy. We are very passionate about providing healthy, gluten free alternatives. Our flour blend is made with whole grains such as brown rice, millet, and sorghum. This provides essential nutrients that you would otherwise be missing out on. We also make everything from scratch, controlling exactly what we put in our meals.
